Makes 24
6 oz (170g) soft butter 6oz (170g) caster sugar 2 eggs 6 oz (170g) self raising flour ICING Freshly grated rind of 1 lemon Freshly squeezed juice of 1 - 2 lemons 4 oz (110g) caster sugar 10 X 7" swiss roll tin, well greased 2. Put the butter, castor sugar, eggs and self raising flour into a food processor. 3. Whizz for a few seconds until the mixture comes together. 4. Pour into the prepared tin, spread evenly. 5. Bake in the preheated oven for 20-25 mins approx or until golden brown and well risen. 6. Meanwhile, make the glazer in a bowl and mix well.
